Happy Casimir Pulaski Day! What? You've never heard of it? Well, that's not surprising if you're not from Illinois. My friend Wikipedia can tell you more about it.
Pulaski was Polish and Illinois has quite the Polish population, so Chase and I celebrated Casimir Pulaski Day by going to the student center for lunch where they were serving Polish food. Mmmmm... pierogies!

Have you ever tried barszcz? It's a weird beet-based soup served cold. It was very interesting.

i've tried it. it tasted bitter to me. but i don't like beets and i generally don't like cold soups.
Nor do I like cold soups, but this one pleased me. It also has a sour cream/yogurt-like taste. It wasn't so bitter to me. Maybe you just got a bad pot o' barszcz.
I always thought it strange that the whole state celebrated this. Most of the Polish population is concentrated to the Chicago area. I never met a Polish person until I went to college. Still I happily took my day off school!
